Roaster Oven Recipes

Apple Brown Betty

3          Tbsp.   butter or margarine, melted

1 1/2   cups     soft bread crumbs

1/2      cup       brown sugar

1          tsp        ground cinnamon

1/8      tsp        ground nutmeg

2          cups     Golden Delicious apples, peeled and sliced

Procedure

1    Preheat the Roaster Oven to 350 degrees F.  Coat a 9 x 5 inch loaf pan with butter.  In a small bowl, toss the bread crumbs with the butter.

2    In a large bowl, combine the sugar, cinnamon, and nutmeg and blend well. Add the apples and gently toss thoroughly to make sure they are coated evenly.

3    Place 1/2 cup of the bread crumbs in the loaf pan.  Layer half of the apples on top.  Continue making layers until the bread crumbs and apples are all layered in the loaf pan.  Cover the pan with aluminum foil.  Place the pan on the roasting rack in the cooking pan.  Cover and bake for 25 minutes. Remove the aluminum foil and bake for an additional 25 minutes.  Serve while warm.

Recipe Tips

This recipe can be doubled for the 18 quart or larger roaster oven.

Baked Beans--for 5 or 6 quart roaster

6-7   lbs.    pork and beans

2       lbs     bacon, cut in bite-size pieces

1       lb      dark brown sugar

1/4   cup   yellow mustard

1/8   cup   Worcestershire sauce

1/4   cup   barbecue sauce

 

Procedure

1    Preheat roaster oven to 400 degrees F.

2    Put beans, brown sugar, mustard, Worcestershire sauce, barbecue sauce and bacon in cook well.  Mix well and cover.

3    When mixture starts to boil, stir well and turn heat down to 250 degrees F.  Let simmer at a light bubbling boil.  Stir often.

4    When beans thicken and juice is absorbed ( about 2 hours), turn to simmer.  Keep warm until serving.

Servings: 20

Baked Ham

15    lb.       fully cooked smoked ham

2       cups   water

1/2   cup     honey

1/2   cup     orange juice

1       cup     brown sugar, packed

Procedure

1    Remove rack.  Pour 2 cups water into roaster cooking pan and preheat roaster oven to 325 degrees F.

2    Trim thick part of fat off of ham down to 1/4 inch. Score remaining layer of fat into diamond design; this will help hold glaze.

3    Place ham on rack and place in roaster.  Combine remaining ingredients to make glaze.  Bake 1 hour.

4    Remove cover and spoon half of glaze over ham.  Replace cover and bake 1 more hour.

5    Remove cover and spoon remaining glaze over ham.  Replace cover, increase temperature to 400 degrees F. and bake for 10 minutes to set glaze.  Internal temperature should be at least 140 degrees F.

Banana Nut Bread

3 1/2   cups   flour

3          tsp.     baking powder

1          tsp      salt

3/4      cup     butter or margarine

1 1/2   cups   sugar

4                     eggs, beaten

3          tsp      vanilla extract

6                     ripe bananas, chopped

1/2      cup     walnuts, chopped (optional)

Procedure

1    Preheat the roaster oven to 350 degrees F.  Lightly coat two 9 x 5 inch loaf pans ( or one 9 x 13 inch baking pan) with cooking spray or butter.

2    Sift together the flour, baking powder and salt.

3    In another bowl, cream the butter and sugar together until they are light and creamy in color.  Add the eggs and vanilla extract to the butter and sugar.  Fold the batter into the flour mixture until blended.  Add the bananas and mix again.

4    Spoon the batter into the loaf pans.  Sprinkle walnuts on top of the bread and place the loaf pans on the roasting rack in the cooking pan.

5    Cover and bake for 55-65 minutes or until a toothpick inserted in the center of the loaves comes out clean.  Cool before serving.

Cheesy Potatoes--for 5 or 6 Qt roaster

1/4   cup                         butter or margarine

1       cup                         onion, chopped

1       (32 oz.) pkg          frozen, diced hash-brown potatoes, thawed

1       (16 oz.) ctn           sour cream

1       (10 3/4 oz.) can   cream of celery soup

2       cups                       cheddar cheese, shredded

1/4   tsp                          ground black pepper

 

Procedure

1    Preheat roaster oven to 275 degrees F.

2    Place butter and onion in cookwell.

3    Add potatoes, sour cream, soup, pepper and 1 cup cheese. Stir

4    Cook for 90 minutes, stir again, halfway through the cooking time.

5    Top with remaining cheese and cook 5 minutes more or until cheese melts and potatoes are tender.

Servings: 12

Recipe Tips

Double this recipe for a 12-18 quart roaster oven.

Chili for 12 or 18 quart roaster

1/4   cup                           margarine

5       lbs                             ground beef or turkey

2       large                         onions, chopped

2       cloves                      garlic, minced

1       (29 oz.) can            stewed tomatoes

3       (10 3/4 oz) cans     tomato soup, undiluted

1       (8 oz.) can               tomato sauce

3       (16 oz.) can            red kidney beans, drained

1/4   cup                           chili powder

1       Tbsp.                        Italian Herb dressing

1       Tbsp                         brown sugar

Procedure

1    Preheat roaster oven to 425 degrees F.

2    Lightly wipe roaster cooking pan with cooking oil; add margarine.  Cover; cook until melted.

3    Break apart meat; place in preheated roaster pan.  Add onions and garlic. Cover; cook 15-20 minutes or until meat is browned, stirring once.

4    Stir in remaining ingredients until well mixed.  Reduce temperature to 350 degrees F.; cover; cook 1 to 1 1/2 hours or until flavors blend.

Servings: 25

Garlic Roast Beef

4       lbs          beef roast

2       Tbsp      olive oil

3       cloves   garlic, peeled and crushed

1       cup        bread crumbs

1/2   cup        fresh basil, chopped

1/2   cup        fresh parsley, chopped

1/2   tsp         salt

1/2   tsp         black pepper

Procedure

1    Pat the roast with paper towels until dry and place it on the roasting rack in the cooking pan.  In a medium bowl, combine the oil, garlic, bread crumbs, parsley, basil, salt and pepper and toss to combine.

2    Sprinkle the garlic/herb mixture on top of the roast.  Cover and roast at 325 degrees F for 48 -60 minutes, or until the roast is tender and cooked to your preference.

Servings: 10

Recipe Tips

This recipe can be doubled for the 18 quart or 22 quart roaster oven, but increase the cooking time based on 12-20 minutes per pound of beef roasting at 325 degrees F.

Homestyle Beef Stew

2       lbs                        beef stew meat, cut in 1-inch pieces

1/2   cup                      dry bread crumbs

1       tsp.                      salt

1/2   tsp                       black pepper

1       medium              yellow onion, chopped

1/2   lb                         baby carrots, rinsed

1       stalk                    celery, sliced

3                                   potatoes, peeled and cubed

1       tsp                       dried basil

1/3   cup                      quick cooking tapioca

1       cup                      fresh crimini mushrooms, thinly sliced

2       (10.5 oz) cans   tomato soup

1       cup                      beef broth

2       Tbsp                    Worcestershire sauce

Procedure

1    In a large bowl, toss the stew meat with the bread crumbs, salt and pepper.  Place the beef in the cooking pan and add the onion, carrots, celery, potatoes, basil, tapioca, mushrooms, tomato soup, broth and Worcestershire sauce. Stir well to combine.

2    Cover and roast at 250 degrees F for 4-5 hours, or until the meat is moist and the vegetables are tender to the fork.

This recipe can be doubled for the 18 quart roaster oven.

Pasta Bake

2       lbs                    ground beef

1                                green pepper, chopped

2                                onions, chopped

1       (12 oz.) pkg    egg noodles

1/2   cup                   butter or margarine

1       cup                   half and half cream

4                                eggs, beaten

1       cup                   cottage cheese, small curd

1       cup                   sharp cheddar cheese, grated

1       cup                   Mozzarella cheese, grated

1/4   cup                   grated Parmesan cheese

2       Tbsp                chopped parsley

1       quart                spaghetti sauce

Procedure

1    Preheat roaster oven to 350 degrees F.

2    In a large skillet, brown ground beef with green peppers and onions.  Pour off grease and set aside.

3    Cook noodles according to package directions.  Drain, then pour noodles into a large bowl.

4    Add butter or margarine to the noodles and toss until butter is melted. Add cream, eggs, cheeses, and parsley to the noodles and stir until blended.

5    Spoon beef mixture into roaster oven pan.  If you prefer, mixture may be divided between two 9 x 13 inch pans or two 2-quart casserole dishes.

6    Pour in spaghetti sauce and stir to mix.  Spoon noodle mixture over beef mixture.

7    If using casserole dishes or baking pans place on rack in roaster cooking pan.  Bake for 25-30 minutes until bubbly.

Servings: 18

Roasted Spareribs

4       racks   pork spareribs -about 4 pounds

                      Marinade

1       tsp       minced garlic

1       cup      packed light brown sugar

1       cup      honey

1/4   cup      cider vinegar

1/4   cup      Worcestershire sauce

1       Tbsp    salt

2       tsp       ground ginger

1       tsp       hot pepper sauce

Procedure

1    Preheat roaster oven to 350 degrees F.

2    Combine garlic, brown sugar, honey, vinegar, Worcestershire, salt, ginger, and pepper sauce; mix well.

3    Cut ribs to fit into cooking pan without touching the sides.  Coat spareribs with marinade.

4    Place spareribs in cooking pan and pour 1 cup marinade over ribs.  Roast for 1 hour.

5    Add remaining marinade and roast an additional hour.

6    Cook until meat internal temperature is at least 160 degrees F.
