Should I put water between the cooking pan and the heat well before using?

     No, you do not need to do this.  The heat comes from the sides of the roaster oven and provides consistent, even cooking thoughout.  Water will actually slow down the cooking process and make it more difficult to clean. 

Can I "deep fat fry" foods in my roaster?

     Do not try to "deep fry" in your roaster oven as the oil will never get hot enough.

How do I bake foods in the roaster?

     Foods including cakes, pies, cookies, quick breads, yeast breads and more can be baked easily in your roaster oven.  Simply place your food in the baking pan and then place on the roasting rack.  Do not place baking pans on the bottom of the cooking pan.  Metal pans are recommended as they provide better heat transfer and browning.  You can cover the roasting rack with aluminum foil and use as a baking sheet or place baking sheet on rack. 

How do I clean and care for the cooking pan?

     The removable cooking pan can either be washed in the dishwasher or washed in warm, soapy water.  Rinse and dry thoroughly.  You can use a non-abrasive pad and non-abrasive cleaner such as Soft Scrub or Bon Ami to remove tough stains.  An easy way to remove baked-on foods is fill the cooking pan with hot water.  Cover and heat at 350 degrees F for 30 minutes.  Turn off and let cool completely.  Then wash pan as directed above.     Do not place the roaster oven cover in the dishwasher. 

     Porcelain enamel cooking pans will not stain and are easy to clean.  However, they will chip if subjected to sharp blows or mistreated.  If the interior cooking surface is chipped, the cookwell should be replaced.  Water spots or mineral deposits( characterized by white spots on the surface) may be removed with household vinegar or non-abrasive cleansers.

     Non-stick cooking pans are made of durable carbon steel.  In order to maintain the non-stick surface, it is recommended to use rubber, nylon or wood utensils.  Avoid cutting food in the cooking pan as this can damage the non-stick surface.

     Stainless steel cooking pans are easy to clean with just hot soapy water or in the dishwasher.  Dry promptly to prevent water spots.  A light scouring with a non-abrasive household cleaner or a commercial stainless steel cleaner and a nylon scouring pad should remove any stubborn burns on the interior surface.

Can I use my roaster oven to slow cook foods?

     The roaster is great for slow cooking.  The heat is gradual which allows a very slow simmer.  No stirring is necessary.  To convert a standard recipe to a slow cook recipe; for each 30 minutes of cooking in the standard recipe, slow cook for about 1 1/2 hours at 200 degrees to 250 degrees F.   This is great for cooking less tender cuts of meat.
